Brightwater Chardonnay 2007

Description
One third of the grapes were whole bunch pressed and fermented to dryness in french oak barriques. This portion was aged on yeast lees and underwent malolactic fermentation. The other portion was fermented in a stainless steel tank to retain the fresh fruit character of the juice. Both portions were matured for 14 months then blended to create an elegant and finely balanced wine.
