Cairanne Les Salyens Grenache Blanc 2007

The grapes are exclusively hand-harvested. The growers first harvest the Grenache blanc, vinified by direct pressing. Later we vinify the other varieties starting with a one-night-long skin-contact at 17° C, bringing increased complexity. For all the varieties we settle the juice and do a slight fining before fermentation (18°C).
