Bouquet: The aromatics – the fragrance – of cabernet sauvignon are so important to us. On the nose, there is blueberry and blackcurrant, but also hints of spices, including sandalwood.
Palate: Those aromas carry through on to the palate, so there’s a unity about this wine. There’s a particular purity of flavour that I like greatly. The textures of the tannins are also part of the palate – both the grape and the oak tannins. They’re very fine – the Troncais oak I use gives great finesse here – and so the wine is rich and mouth-filling character, very harmonious. It finishes long, with hints of mocca.
