After gentle crushing and de-stemming, the must was transferred to Macro bins for inoculation with yeast and fermentation. Following an eleven day fermentation, the wine was pressed and transferred to 60
gallon French oak barrels. Aged for 12 months, the wine was then racked off its gross lees and bottled.
