No fermentation occurs, but the juice develops a excellent richness of colour and flavour. Our usual pure yeast is added after we warm the juice, and fermentation is allowed to proceed, without cooling. Whole bunches and stalks were added to the crushed grapes, then fermented with regular pigeage prior to pressing. The ferment was plunged twice a day, and on completion is pressed and then our usual methods take over.
