Descrizione del vino | A continuos ferment of every batch that comes into the winery – every variety that comes in, every batch a bucket. Then Taras Ochota goes off and picks 17 different botanicals from his property and in the local bushland. The botanicals include wormwood, river mint, sage, rosemary, lemon balm and elderflower, amongst others. All within a few steps from the winery. A bouquet garni is made, soaked in the rolling white-red wine, then the brew is bottled as a ‘dry red wine’. Aromatised ‘reds’ remind me of the alpine areas of Italy and their botanical/herb infused wines. |
