One half was lightly whole-cluster pressed and fermented in cold stainless steel barrels to retain a fresh, floral component. The other half was destemmed into shallow MacroBins and boot-crushed. This juice remained in skin contact for about three hours, and was then pressed and fermented in neutral French oak for increased mouthfeel. |
