Vinbeskrivning | 103 year-old dry-farmed, own-rooted Grenache fermented with native yeast, aged in neutral French barrels, bottled unfiltered. One of the great cerebral and sensual gifts of working with vineyards, is finding those that emit a consistent flavor and aromatic signal vintage to vintage, regardless of the character of that vintage. We find that the clarity of that signal is amplified, as the quality of the viticultural practices, and timing of harvest is improved. George Besson’s old grenache vines seem to be singing more and more in tune that past couple years. The piney and candied aromatic quality associated with certain hibernal holiday spice cakes has grown more intense the last several vintages. This is certainly an expression of terroir – the unique signal of noble vineyards communicated through an appropriate variety – ramped up to 11 by our inclusion of a small percentage of dried grapes [the appassimento process most famously employed in Valpolicella.] As is our customary practice, fermentation commences with native yeast, aging occurs in neutral barrel and the finished wine is bottled without filtration. Tasty now, but if the 2012 is any indication, likely to really start singing in 2 to 3 years. |
